In autumn I like to make preparations from vegetables. It takes a lot of cooking time. In winter, I start a happy time of rest from the worries of the country. Get cooked zucchini with beans for the winter and a delicious garnish for meat, sausages, grilled sausages from the shelf, ready. My cookbook contains not one, but several recipes for hearty, winter salads. Now I will share with you. The first in my rating is squash caviar with beans.

I try to make caviar from zucchini quickly. I plan all the stages so that the cooking time is spent to a minimum. I start to cook caviar with beans. In the evening I sort out the beans (1 glass) from the garbage, wash them, fill them with water and leave them overnight.

In the morning I drain the water from the beans, pour fresh water and put it on the stove. I add a little salt to the water. Cook the beans until half cooked over low heat for 30 minutes. In the meantime, I am engaged in zucchini. By the fall, I have a huge number of them. Choose anyone.

I take those that will not be stored for a long time - with tails torn off inaccurately. Before peeling the peel, I wash it and only then peel it. I cut the zucchini into pieces to make it easier to remove the seeds from the zucchini. I rinse the pieces of zucchini without seeds and peel and cut into cubes. Pure zucchini is 3 kg.

I take on carrots and onions. Both need 2 pieces. I take not a trifle, but vegetables of a good, large size. I clean, mine, cut onions into cubes, rub carrots on a regular grater. I put 2 pans on the stove. On the smaller one, I fry the carrots and onions, on the larger one - zucchini. Both frying pans, pre-grease well with vegetable oil.

I transfer zucchini and fried vegetables to a large saucepan, add:

  • 100 g tomato paste;
  • 20 g of salt, sugar.

I carcass vegetables for 30 minutes, add ready-made beans to them, 2 garlic cloves chopped on a press, 30 ml of vinegar, oil (vegetable) 50 ml, stir, carcass for 10 minutes, closing the lid. At this time, I prepare jars (mine, sterilize). I lay out the finished workpiece in clean cans, close the lids, send it for storage. Usually, banks are covered with a blanket for several days. I do this too, but not always.

Beans in tomato sauce

As a child, I loved beans in tomato sauce. Her mother bought her in the store. I found a recipe for a delicious dish on the Internet and tried to repeat it. The experiment went well. The workpiece was appreciated by all the friends. I am pleased to share the recipe.

I put 1 kg of white beans to boil. I take out an electric meat grinder. I will grind tomatoes on it. They are needed to make tomato sauce. You need exactly 3 kg. Peel the skin from the tomato.I dip the tomatoes in a colander into boiling water for a few seconds, the skin flies off by itself, you just need to help it a little.

I put a large pot on the stove. I pour the blank for the sauce into it and pour the spices:

  • Black pepper;
  • Red pepper;
  • Sugar 1 tbsp. l;
  • Salt 1 tbsp l;
  • Bay leaves 4 pieces.

You need to lay down the pepper to your liking. For spicy lovers, you can pour in a teaspoon. I cook the sauce for 30 minutes. I send the finished white beans into a saucepan with sauce, carcass for 10 minutes. While the workpiece reaches, I wash half-liter jars, sterilize them, lay out the beans in the sauce. I roll up the cans and store them in the cellar. If you don't have a cellar, close the jars and place them on the bottom shelf of the refrigerator.

Delicious zucchini salad with beans

I hope everyone will enjoy this hearty and delicious recipe for winter squash and beans. It is easy and pleasant to cook. Tomato juice - I take 1 liter ready-made, store-bought. For this volume of juice, I clean 3 kg of zucchini from seeds and skins.

I cut the zucchini into cubes. I try to make them the same size. I cut it not very thinly, so as not to fall apart during cooking. Beans 2 tbsp I cook in advance, first soak for 8-12 hours, then boil almost until tender.

In addition to beans and zucchini, you need 500 g of sweet peppers. For beauty, you can take multi-colored peppers: yellow, green, red. I clean the peppers from seeds and partitions, cut them into cubes.

I put all the vegetables in a large saucepan. I add spices (salt, pepper) to taste, sugar 200 g, vegetable oil 1 tbsp. and all the tomato juice. I boil vegetables for 60 minutes. At the very end, pour in a tablespoon of vinegar.

I take sterile jars and lids. I pour the winter snack hot into jars and roll them up hermetically with lids. I wrap the jars with a warm blanket so that they stay hot longer. Two days later I send jars of zucchini for the winter to the cellar for storage.

Amazing zucchini salad with vegetables

You can make an amazing salad from zucchini for the winter. You will need other vegetables for harvesting:

  1. White beans.
  2. Tomatoes.
  3. Bell pepper.
  4. Apples.

Soak beans 500 g for 6-12 hours, boil, put in a colander. Let's take care of tomatoes. Let's take 1.5 kg. We will make the sauce from them. The skin should be removed. To make our work easier, we scald boiling water tomatoes.

We will grind the tomatoes with a blender. Sending the tomatoes to the blender bowl, cut them into 4 pieces. Let's take 4-5 apples for the sauce. After removing the seeds, you should get 500 g.

Grind apples and tomatoes until puree. Pour the apple-tomato sauce into a saucepan, send 200 ml of vegetable oil, 100 g of salt, 150 g of sugar there. While the sauce is boiling down, clean and cut the bell pepper into squares. It is needed in its pure form 0.7 kg.

It remains to prepare the zucchini. Without skin and seeds, you should get 3 kg. Cut the pulp into cubes. Pour all vegetables into a saucepan with sauce. Boil the vegetable mass on minimum heat for 40 minutes.

At the end of cooking, 15 minutes before the end, add 100 g of chopped garlic, 3-4 minutes before the end of cooking, pour in vinegar 3-4 tbsp. l. We pour the resulting yummy into jars and wait for winter.

    I made this blank, we have already opened one jar for testing. It turned out to be a very tasty snack.Beans feel great, and thanks to homemade fleshy tomatoes, the taste is rich, aromatic.     The recipes are interesting, but so that they are also useful, please indicate the percentage of vinegar and instead of “salt to taste” indicate how much salt you put yourself.
