Unfortunately, the season for fresh summer vegetables is passing quickly. It is being replaced by the time of delicious preparations, and cucumbers, canned with rowan for the winter, will be an excellent addition to both daily and festive tables. Vegetables prepared together with berries acquire a pleasant non-standard taste that will be appreciated even by demanding gourmets.
Required ingredients
Simple ingredients are needed for canning. These are cucumbers, mountain ash, garlic, allspice, sugar, salt and vinegar.
Preparation of vegetables and berries
Cucumbers should be kept in water for at least 4 hours before canning. Rinse the berries thoroughly. This is all that needs to be prepared from the products for further processing.
Recipes and step-by-step instructions for preparing a snack
As you know, mountain ash is red and black-fruited. Therefore, the recipes for cooking canned cucumbers with these berries are somewhat different.
The classic version of cucumbers with bunches of mountain ash
According to the traditional method, vinegar is not needed to make canned cucumbers with the addition of mountain ash, as mountain ash contains a sufficient amount of acid. Follow these steps:
- Take 1 kg of vegetables and 2-3 sprigs of berries in a 2-liter jar.
- For the marinade, prepare 0.7 liters of water, ¾ cup sugar, 20 g salt and 5 allspice peas.
- Cucumbers laid in sterile jars should be poured twice with boiling water, and on the third - pour marinade and close with seaming lids.
If desired, you can add bay leaves, horseradish leaves, cherries, grapes, currants.
With red rowan
For preparation you will need:
- 2 kg of tomatoes and 5 bunches of berries in a 3-liter jar;
- 1.3 liters of water, 1 glass of sugar, 1 tbsp. l. salt for the marinade.
The vegetables should be thoroughly washed, the ends cut off and placed in a container, alternating with berries.
Next, you need to dissolve salt and sugar in water, boil the mixture. Filling is done with brine three times. After that, the cans can be rolled up and left to cool upside down, wrapped in a warm cloth.
With black chokeberry
To close cucumbers with chokeberry for the winter, follow this recipe:
- put berries in jars (without branches);
- add a few cloves of garlic and allspice peas;
- lay out the cucumbers;
- fill the container with boiling water, cover and hold for about 15 minutes;
- boil an infusion of sweetener, water and table salt, add vinegar and water from cans to the mixture;
- boil the brine, and then pour into jars.
Finally, seal the jars and leave them to cool with a blanket.
Cucumbers prepared according to this recipe are suitable for preparing side dishes, appetizers, salads, and all kinds of canapes.
Since canning takes place without sterilization, the vegetables remain crispy.
Pickled cucumbers with rowan
To prepare pickles with rowan, only red berries are used. For a 2-liter jar, take about 1.5 kg of vegetables, which are pre-soaked in water for 8 hours, changing the water once. Cucumbers are laid out in a jar and poured with a marinade made from 1 liter of water, 1 tbsp. tablespoons of salt and 3 tbsp. tablespoons of sugar. To this add ¼ cup of apple cider vinegar 4%.
Canned cucumbers with berries
Instead of rowan, cucumbers can be covered with other berries, for example, currants, cranberries, cherry plums. However, in all these cases, vinegar should be added, using the classic recipe as in the case of chokeberry. The only exception is canning cucumbers with cranberries, since this berry, like red rowan, provides enough of its natural acid.
Vinegar-free recipe
Natural acid is excellent at preserving vegetables, allowing them to be stored as usual with vinegar. When canning a three-liter jar, take half a kilogram of berries. Otherwise, the recipe is exactly the same as the usual canning method. Instead of mountain ash, you can use sorrel, sour apples, or lingonberries.
