Mother-in-law makes tongues from overgrown cucumbers and from young ones. They are placed in cold water for 1 hour, because they will then be easier to wash and the vegetables will not be lethargic. Pick up large, ripe, fleshy tomatoes. You should remove the skin from the tomatoes, first placing them in boiling water for a couple of minutes, then cut the skin crosswise to easily remove it.
When cooking, you need to observe sanitary conditions: vegetables to create a mother-in-law's tongue are taken fresh, washed, dried, cut with a clean knife, placed in sterilized glass jars, rolled up with metal lids.
Prepare glass jars with a volume of 0.5 - 1 l, you can use standard 0.75 l. They are sterilized for at least 10 minutes. The glass walls of the jars can contain a large number of bacteria and microorganisms. Sterilization kills bacteria by exposing them to high temperatures. If the container is not sterilized, the lids of the rolled blanks may swell or the brine may cloud.

Classic recipe
Ingredients (per 9 l):
- hot peppers - 100 g;
- cucumbers - 6 kg;
- pepper (bulgarian) - 1 kg;
- tomatoes - 3 kg;
- cloves of garlic - 200 g;
- a glass of apple cider vinegar (6%);
- a glass of granulated sugar (250 g);
- 4 tbsp. tablespoons of coarse salt (80 g);
- 2 cups sunflower oil
Cooking process:
- Rinse the vegetables.
- Peel the skin from overgrown cucumbers, then cut them lengthwise and take out the seeds with a small teaspoon. Then chop it on a grater. Young ones simply cut into thin slices diagonally. Place the vegetables in a thick-walled cauldron.
- Cut the stalk of tomatoes, cut. Chop all available peppers, remove seeds. Pass through a meat grinder. Pour the resulting puree into a cauldron with cucumbers.
- Pour sunflower oil into the cauldron, add coarse salt and granulated sugar, mix gently.
- Put on the stove over low heat, wait for everything to boil, and then cook for 20 minutes, stirring continuously.
- Pour in apple cider vinegar, cook for 5 minutes, remove from heat.
- Put cooked snacks into jars, roll up metal lids, wait until they cool.

The recipe for this cooked snack is simple.
Ingredients (per 6 l):
- cucumbers - 6 kg;
- hot tomato sauce - 1 l;
- a glass of granulated sugar (250 g);
- 2 tbsp. tablespoons of coarse salt (40 g);
- a glass of 9% table vinegar (250 ml).
How to make this most simple recipe:
- Rinse the vegetables.
- Use a potato peeler to cut the cucumbers into long thin strips and place in a saucepan.
- Add granulated sugar and coarse salt to tomato sauce (1 l). Pour into a saucepan, let it brew for half an hour.
- Place the pot over low heat and simmer for half an hour.
- After 25 minutes, pour in the vinegar, stir thoroughly, cook for another 5 minutes.
- Place the prepared salad in sterilized jars. Roll up metal lids. Put the jars on the table, lids down, wait for the salad to cool.
The taste of such a dish will be different depending on which tomato sauce you put in. It is better if the sauce is very hot and spicy.
Mother-in-law's tongue with cucumbers and bell peppers
Ingredients (per 6 l):
- cucumbers - 3 kg;
- tomatoes - 1.5 kg;
- Bulgarian pepper - 4 kg;
- hot peppers - 100 g;
- cloves of garlic - 100 g;
- 2 tbsp. spoons of coarse salt;
- 8 Art. tablespoons of 6% apple cider vinegar;
- 1 glass of sunflower oil.
Cooking process:
- Rinse the vegetables.
- Put tomatoes in boiling water, peel off the skin, cut into small squares. Place 1.5 kg of tomatoes at the bottom of the cauldron, pour 1 glass of sunflower oil.
- Take 3 kg of cucumbers, cut them into thin strips or circles. Place them on top of the tomatoes in the cauldron.
- Peel the seeds from the peppers. Pass in a meat grinder, add salt. Pour everything on top into a cauldron.
- Place the cauldron over low heat. After boiling, mix everything carefully, boil for another 20 minutes.
- Peel the cloves of garlic, crush. Pour the garlic into a cauldron and pour in the vinegar, mix and cook for 5 minutes.
- Sterilize the jars, put the salad in them.
- Cover with lids, roll up, wait for the salad to cool.
The appetizer comes out spicy, spicy and aromatic. Tomato cubes are especially good there.
Mother-in-law's tongue made from cucumbers, pepper, tomato sauce
Ingredients (per 7 l):
- cucumbers - 6 kg;
- sweet pepper - 1 kg;
- hot peppers - 100 g;

- a glass of granulated sugar without top (200 g);
- 4 tbsp. tablespoons of coarse salt (80 g);
- 2 tbsp. spoons plus 2 teaspoons of 70% vinegar essence.
How to do:
- Rinse the vegetables.
- Take 6 kg of cucumbers, cut into thin slices, put in a saucepan.
- Remove the seeds from the pepper, chop, mince together with the cloves of garlic. Stir the mixture with tomato sauce, add coarse salt, add oil and add a glass of granulated sugar without topping. Pour into a saucepan.
- Put on a low heat. Boil for half an hour, pour in the vinegar essence, stir, leave for a few minutes, then place in sterilized jars and close them, put on the table, turning over.
- When the salad has cooled down, you can place the blank wherever the jars will lie for the winter.
The salad will be a great addition to a variety of dishes, for example, fish or meat. Cooking such a snack does not take a lot of time, and as a result, you can enjoy wonderful, spicy, aromatic vegetables in winter.
