Rice is a delicious and nutritious cereal that goes well with both meat and vegetables. Despite the fact that in the name of the recipe you can most often find the definition of "vegetable" for an appetizer, you can roll meat and fish with rice. You don't have to be afraid that perishable food will go bad - rice can be excellently preserved, and if you also follow all the rules for rolling, you can not worry about a snack in a secluded basement or pantry.
The prepared preservative can be eaten both cold and hot - whatever the household or guests wish. Such a salad with rice is no worse than any other preservation - for a gala dinner, it may not be suitable, but for a family evening - quite.
Let's prepare the rice correctly
You can choose any white rice - whichever you like best. Some people prefer "short", but it will take a little more than "long". Long predominates in the conservation market, as it is voluminous and is liked by the majority. It's better not to take risks with brown rice and other exotic things - the recipes are designed for white.
Before preserving, the rice must be washed well (3-4 rinses under running water) and soaked in a large bowl for two hours.
Choosing a safe container
Previously, factory-made rice snacks were sold in cans, just like other canned foods. This option is ideal from a safety point of view, but not everyone has the opportunity to make, literally, homemade canned food. There is a cheaper and more affordable alternative to everyone - glass.

As is the case with most popular recipes, the rice snack immediately acquired analogues, sometimes even more popular than the original one.
Among other vegetables, snacks were made with legumes, with meat and fish, with mushrooms - all this only added nutritional value.
To this day, step-by-step recipes have been preserved that will delight someone for the first time, and remind someone of the taste of childhood or an unassuming student body.
Classic recipe
The original instructions for making a snack with rice assume there are only four ingredients besides rice (there is also vinegar - it serves as a kind of sauce):
- carrots (1 kilogram);
- tomatoes (3 kilograms);
- sweet pepper (1 kilogram);
- onions (1 kilogram).
The vegetables listed above can be found in Russian cuisine with the greatest probability (only a cucumber will overtake them). It is not surprising that a recipe with such simple and cheap products quickly became popular. There will be a three-liter jar for the measure. Rice will need one glass (by the beginning of cooking it should already be soaked), and as additional ingredients:
- 100 grams of sugar;
- 100 milliliters of vinegar;
- two tablespoons of salt;
- 400 grams of vegetable oil.
Once the rice is ready, turn for the vegetables. Everything is cut into small pieces that can easily fit and mix in a jar. Cut the pepper into strips, the onion into small cubes. Carrots can be grated on a coarse grater. Tomatoes are needed for a separate harvest - you will have to grind them to a puree state (the easiest way to do this with a meat grinder), and when ready, add all the salt, butter and sugar there, mixing thoroughly.
The tomato paste is heated over medium heat, adding vegetables only after boiling. After that, you will have to wait for the boil a second time, but for the whole vegetable mixture - now you can throw rice, which will be stewed with vegetables for half an hour. Five minutes before the end of the time, pour in vinegar, stirring.
Hot, the snack is poured into a jar or several small ones, after sterilizing them.
Vinegar-free recipe
Vinegar is an “amateur” component, not everyone likes its taste. In the process of preservation, it plays an important role, but you can do without it by carefully processing the products.
Peppers, carrots and onions are cut in the same way, stewed in a pan together for about half an hour, after which chopped tomatoes and rice are added. When the rice is ready, you can remove the appetizer from the stove and roll it up.
Spicy tomato appetizer with rice without sterilization
From the new one you will need hot red pepper, about two pods. Since there will be no preservation itself, the ingredients must be steamed very carefully. It's just that the tomato will not work anymore - it must be cooked until a paste is made for 40 minutes, and then the same amount, adding the rest of the vegetables in an already fried form. Rice at this time should be cooked separately - it will take half an hour. The final stage - rice and spices are added to the sauce and cooked for another 10 minutes.
Lecho with rice
Lecho is a spicy vegetable snack that rice will not spoil in any way. Almost does not differ from the standard recipe, except for the presence of pepper, garlic and spices for the taste of the hostess (basil, bay leaf, mustard or paprika).
The cooking recipe is similar to the classic one, only 7-10 minutes after the start of cooking, not only other vegetables, but also spices are added to the sauce. You don't need to boil the rice to the end - let it simmer in the vegetable mixture for only 20 minutes.
Pepper snack
All you need to do for this modified recipe is to take not a kilogram of pepper, but two. There should be the same amount of tomatoes - three kilograms, since this is the basis of the recipe. Everything is stewed according to the classic recipe, rice is added last and cooked for about 20 minutes.
Rice and green tomato appetizer
Green tomatoes are edible anyway, but in jars they will ripen, soaked in vegetable juice and vinegar, and become much tastier. Due to the addition of spices, you will get a piquant and original appetizer, least of all reminiscent of pilaf. To create it, it is enough to change ordinary tomatoes to green ones.
Snack with tomato paste and rice
Can you replace tomatoes with pasta? You can, but you will need a lot if we are talking about several banks. This is significantly more expensive than just three kilograms of tomatoes, but if you like the taste of a certain brand of tomato paste more, just simmer it to a boil and follow the classic recipe.
Eggplant appetizer
Eggplants are very popular and affordable vegetables, it would be strange not to find variations of the recipe with them. With the addition of eggplant, other vegetables are not removed, but the proportions are slightly shifted. Now tomatoes need 2.5 kilograms, and eggplants - 1.5 kilograms. Otherwise, everything remains unchanged.
With the addition of beans
Beans are very nutritious, so you need only 200 grams for the recipe, due to which the amount of carrots is reduced to 0.8 kilograms. Beans also need to be soaked, but less than rice - only an hour. Beans, like rice, in this recipe need to be boiled a little until they are almost cooked and only then tossed into the sauce, where fresh garlic with other vegetables has already been added.

If there is a special grater on which you can grate carrots using the Korean "folk" method, then this option is worth trying. You will also need garlic, a lot of spices and peppers, vinegar - so that the taste of the appetizer gives off the famous salad. Tomatoes need 2.5 kilograms, carrots - 1.5 kilograms. The vinegar is added five minutes before the stove is turned off, everything else is unchanged - and the delicious snack is ready.
Meat appetizer
Meat can and should be added, but before that it must be extinguished in order to exclude the process of decay during storage. Vinegar cannot be ruled out. The meat is cooked separately and only in the last 20 minutes of cooking the sauce is thrown into it to soak. The weight of the meat can be arbitrary, but it is important to match it with the weight of the vegetables so that there is enough space in the jar.
With the addition of mushrooms
Mushrooms are combined with vegetables; in such a mixed recipe, there is almost no difference between them. You can cut them into four slices (or six if the mushrooms are large) and safely throw them into the sauce along with the rest of the vegetables. Boiling with tomato will quickly saturate their porous bodies with vegetable juice.
How much and how to store?
You can keep a snack rolled up in a sterilized jar of vinegar for at least years in a row. The rest will have to look after and, possibly, make mistakes, gaining experience and throwing away the spoiled.
Store in the same way as all preservation - avoid direct sunlight, pressure and temperature changes.
