Secrets of making whole apple compote for the winter
Apple compote, which is placed entirely in a jar, can be prepared in two ways: without sterilizing containers with compote or with full heat treatment.
Note! To prepare compote for the winter without sterilization, you should take medium-sized apples with loose flesh, otherwise they will remain firm.
The most suitable apple varieties for whole-fruit canning are Bely Naliv, Papirovka, Melba, Moscow Grushovka, Early Barnaulskaya, Dubrovinka, Zhebrovskoe, Kuznetsovskoe, Lydia, Geneva Erly, Nezhenka.
If you need to get more drink, then the containers are filled with fruit by half or 1/3. If more fruits are needed in the twist, then they are laid in jars on "shoulders".
Required products for the recipe
The apples in the blank give off all their aroma, therefore, for a simple compote, only fruits and sugar are needed. For those who love the aroma of cinnamon, mint or rosemary, we recommend adding small amounts of your favorite spices to the canning.
Selection and preparation of ingredients
Summer apples cannot be stored for long. Within 2-3 weeks, they become overripe and quickly deteriorate. For compote, you can take slightly overripe fruits, but without dark spots, wormholes and rot. The fruits are washed and left for a few minutes on a cloth to dry. If the fruit is very hard, you can make 1-2 punctures with a toothpick near the stalk.
Preparation of containers
Whole fruit compote is harvested in three-liter jars. The containers are washed in a baking soda solution. For heavy dirt, use a brush. Then they are washed under running water and sterilized in a large saucepan with boiling water for 5-7 minutes. The lids are kept in hot water before rolling the cans.

Required products for 1 can:
- medium-sized apples - 7-12 pieces;
- water - until the volume of the container is completely filled;
- sugar - 300 grams.

Wait until the syrup boils inside the jars and detect 10 minutes. After this time, roll up the cans, turn over to check the tightness, wrap to preserve heat, allow to cool.
Recipe without sterilization - the ingredients are the same. Pour containers with fruits with hot water and leave for 15-20 minutes. Pour water into a saucepan, boil to make syrup. Pour the jars with boiling liquid with sugar, roll up, wrap, wait until it cools completely.
Storing treats
Compotes harvested with heat treatment can be stored at room temperature for a year. Containers should not be in direct sunlight. Optimal conditions for storing all workpieces are provided in the basement - a constant temperature of 3-4 degrees and an air humidity of 60-70%. It is advisable to eat fruits from a freshly opened jar within 24 hours.
