Making fig jam - features and secrets
The main rule of success in making delicious fig jam is the competent collection of quality raw materials. The plant comes with black and green-white fruits. The first ones are filmed at the moment when they acquire a dark lilac color. The green berries have a slightly yellow tint at the time of ripening. The main criterion for fruit ripeness is the ease of their separation from the branch, they should practically fall off the stem.
Always prepare fresh syrup to make jam. The proportions of water and sugar look like 1: 0.5, how much to take in each case is determined by individual preferences for sweetness. Fig berries are not stored for a long time, therefore, after harvesting, you must immediately start preparing the dessert.
If the recipe for the winter involves cooking, and as a result of cooking the jam turned out to be liquid, then the boiling time is slightly increased.
Preparing figs
After picking, the berries must be carefully sorted out and washed. Excess debris is removed from the collected mass, including leaves and twigs. Each berry needs to be pierced, you should be careful, since wasps may be present in some already burst fruits. To do this, you can use a regular plug, it is recommended to make holes in several places.
Simple recipe "Five minutes"
One of the simplest recipes for making treats at home. The advantage of the quick method is also the ability to eat dessert right away. Peeled berries in the amount of 1 kg are covered with granulated sugar in a saucepan and cleaned overnight in a cool place. The container is put on fire and brought to a boil. For a fresher, rich taste, 0.5 lemon is added and the mixture is cooked for 5 minutes on low flame with constant stirring. The fire is turned off and after 15 minutes the process of bringing to a boil is repeated. The jam is placed in jars and closed.

For this recipe, it is necessary to peel the berries, but some housewives neglect this requirement.
In order to cook the jam, you will need:
- berries 3 kg;
- sugar 2.5 kg;
- 1 lemon.
Peeled berries are placed in a deep container and covered with granulated sugar. In this form, the fruits should be kept until the released juice covers the berries. The time depends on the variety of berries and on average varies from 6 to 12 hours. You don't need to stir the figs with sugar.
Next, the container is put on fire and cooked on a medium flame for 15 minutes. The pot is removed from the stove and the mixture is allowed to cool completely. Then the sequence of actions is repeated twice. The final cooking time should ultimately be 45 minutes. The lemon jam should be viscous and not spread on the plate.
The final product yield should be 3 liters. Next, the dessert is laid out in jars, a couple of lemon slices are added to each.
Fig jam with hazelnuts
This jam is traditionally preferred to cook in Abkhazia. For the recipe you need:
- figs 1 kg;
- sugar 1.5 kg;
- nuts 1 kg;
- water 400 ml.
Prepare syrup from water and sugar in the amount of ½ of the recipe norm. Peel the hazelnuts if necessary. Make a puncture in each berry and place a nut there.
Place the processed fruits in a saucepan and pour syrup cooled to a warm state on top. Leave the mixture in a cool place for 12 hours.
Bring the berry-nut mixture to a boil, drain the syrup. Allow to boil again and keep on fire for 15 minutes, stirring constantly. Pour the remaining amount of freshly prepared syrup into a saucepan. Leave in a cool place for 12 hours. Boil the jam, removing the resulting foam from above. After cooling down, the treat can be laid out in jars.

For the recipe, you will need 1 kg of sugar and fig berries, lemon and 5 tbsp. l. walnut. The cooking process is similar to the previous recipe, but before being placed in the berries, the nuts are pre-fried in a pan until they acquire a golden color. Lemon is added in a couple of slices directly when putting the jam into jars.

This recipe assumes a 2 to 1 ratio of berries and sugar; for longer storage, you can take the ingredients in equal amounts. The recipe requires:
- berries 1 kg;
- sugar 0.5 kg;
- 2 lemons;
- ground cinnamon, cardamom, ginger 1 tsp each.
Step by step cooking procedure:
- cut the figs into pieces, sprinkle with sugar, leave for 1 hour;
- add lemon juice, you can grate the zest for a richer taste;
- add seasoning to the mixture and put it in a multicooker on high pressure with a closed valve;
- put the jam in jars after cooling.

Correctly sorted and washed berries are cut, mixed in equal proportions with sugar. The sweet mixture is placed in a slow cooker for 2 hours in stewing mode. After the end of cooking, the jam can be eaten immediately.
Plum and fig jam
It is necessary to make such a jam from plums and figs from equal proportions. For 1 kg of berry mixture, 1 kg of sugar is needed. The plums are cut in half and pitted. Syrup is prepared from 400 ml of water and sugar. Put a mixture of fruits in a saucepan, pour boiling water over it and bring to a boil. Cook over low heat from the moment of boiling for 10 minutes. Hot jam is immediately poured into jars, rolled up with a lid, turned over and covered with a blanket. After 12 hours, containers can be removed to storage.
Fig and orange recipe
For cooking, you will need 600 g of berries, 300 g of sugar, 0.5 orange and a cinnamon stick.The figs are cut into pieces, put in a saucepan, a little water is added and the top is covered with sugar. The orange is doused with boiling water, juice is squeezed out of the fruit into the pan, and the zest is rubbed on a fine grater, cinnamon is added. The mixture is left for 3 hours, after which it is put on fire and brought to a boil, after which it is poured into jars.
Fig and grape jam
For the recipe, large grape varieties are taken. It is necessary to cook the jam in compliance with the following proportions of the ingredients:
- black figs 650 g;
- grapes 650 g;
- sugar 250 g
Figs are cut into small pieces, grapes are cut in half, while the seeds are removed, if any. The berries are mixed, covered with sugar and left for 12 hours. Then put on fire, bring to a boil and keep on fire for 5 minutes.

The berries are passed through a meat grinder or chopped with a blender. The mixture should stand for a couple of hours, after which the released juice is drained. Next, sugar is added to the berries, it is necessary to cook in accordance with the proportions of 1 to 1 or 1 to 2, depending on how sweet the delicacy should turn out to be. Such a dessert is not stored for a long time, therefore, it is not prepared in large quantities.
Sugar Free Fig Jam
The advantage of this jam is its low calorie content compared to traditional recipes. You can make such a delicacy with a minimum amount of financial costs.
The essence of the method consists in cooking for many hours, in which excess moisture evaporates, and the berry mixture acquires the consistency of a jam.
The berries are peeled and crushed and placed in a saucepan. The mixture is boiled for 4 hours, after which it is removed to cool. Then the cycle is repeated until a homogeneous mixture is obtained, which easily leaves the walls of the pan. On average, you will need to carry out the steps 3 or 4 times.
