Winter Greek Bean Snack Recipes

Greek winter snack recipe with beans and eggplant
This preservation can be served as an independent dish and used as a dressing for borscht or cabbage soup. And if you heat it up, you get a full-fledged vegetable stew. Greek salad is quite simple to prepare.
Required Ingredients:
- 600 grams of medium sized eggplants;
- 550 grams of beans (you can take white, purple or spotted);
- 3 large carrots;
- 1 kg of tomatoes (it is better to take sour varieties);
- 350 grams of bell pepper;
- Vegetable or olive oil;
- 150 grams of garlic;
- 3 tbsp. l. finely ground table salt;
- 1.5 cups granulated sugar;
- 100 ml of acetic acid.
Method of preparing salad in Greek
Wash the eggplants thoroughly, cut into medium-sized cubes and soak in cold salted water. Soak the beans overnight, drain the water the next morning and pour in a new one. Cook until tender.
Rinse the carrots under running water and peel. Then grate. Peel the bell peppers with seeds. Cut into medium-sized cubes. Peel the tomatoes and roll in a meat grinder along with the cloves of garlic.
Put tomatoes and garlic in a saucepan or cauldron and bring them to a boil. Add acetic acid, granulated sugar, salt and 3 tbsp. l. oils. Then put the grated carrots and wait until everything boils. Then put the pepper and bring it back to boiling point. Add eggplant. When the salad is boiling, reduce heat and cook for 35 minutes.
After half an hour, add the boiled beans and cook for another 20 minutes. Stir regularly.
Arrange the preservation in jars and sterilize them for 20 minutes. Then cover with sterile metal lids and roll up. Turn the jars over, cover with a cloth and let them cool to room temperature. Move to a cold room.
Greek salad recipe:
A Greek appetizer for the winter is prepared with the addition of various vegetables. You can experiment and add any vegetables.
Required Ingredients:
- 1 kg of white beans;
- 500 gr white onions;
- Filtered water;
- 4 small carrots;
- 1.5 kg of bell pepper;
- Chilli;
- 1 cup granulated sugar;
- 200 ml tomato sauce;
- Oil (you can take any);
- 2 small heads of garlic;
- Black pepper (you can take ground or peas).

Soak the beans in cold water for a day. The next day, change the water and boil it until tender. Cook for about 1 hour. Peel the onion, cut into thin rings and fry until golden brown.
Wash carrots, peel and grate on the coarsest grater. It is advisable to fry carrots with onions. Peel the Bulgarian pepper and cut into thin strips. Put all vegetables in a large saucepan, add sugar, tomato sauce, oil and ground pepper. Bring to boiling point and cook for half an hour. Add hot chilli and chopped garlic 5 minutes before the end of cooking.
This winter salad is rich in nutrients. It is especially good to use it as a dressing for borscht. The appetizer will add an unusual flavor and aroma.
Greek salad with beans, tomatoes and herbs for the winter
Greek bean salad is a great alternative to summer salads. If you add black pepper or chili pepper, then the appetizer will turn out to be very spicy.
Required Ingredients:
- 2 kg of purple beans;
- 1.5 kg of medium tomatoes;
- Several large carrots;
- 500 gr of Bulgarian pepper;
- 4 onions;
- 50 grams of granulated sugar;
- 100 grams of coarsely ground table salt;
- 1 liter of oil;
- Black pepper (it is better to take ground, but peas are also suitable);
- 1 tsp vinegar essence;
- Several sprigs of dill;
- A bunch of fresh parsley;
- Cilantro;
- 100 grams of garlic.
The process of making Greek preserves:
Soak the beans for 24 hours in ice cold water. Then change the water and cook until tender. Peel the tomatoes (you can soak them in hot water for 2 minutes to make the skin easier to remove). Immediately after that, they must be immersed in cold water.
Cut the tomatoes into small cubes and fry in a pan in 3 tablespoons of vegetable (or olive oil). Then put the tomatoes in a large saucepan, add the beans to them and cook over the lowest heat.
Chop the pepper into strips and fry in a pan. Then add it to the tomatoes and stir with a wooden spatula.
Chop the onion and fry until tender. Peel and grate the carrots. Add to the finished onion. Then add these ingredients to the rest of the vegetables in a saucepan.
It is recommended to cook the salad over low heat all the time. Pour sugar, salt and all other spices there. Then add vegetable oil and vinegar essence.
Wash the herbs thoroughly and chop finely. Crush the garlic. Add herbs and garlic to vegetables and cook until tender. General preparation of the snack for about two hours.
